Known for its Continental cuisine for nearly half a century, Orange Hill Restaurant has morphed into something of a steakhouse, serving “prime steaks and primo views” with vistas from Catalina Island to downtown Los Angeles. Steaks include large-format tableside entrees such as chateaubriand and dry-aged tomahawk, beef from superior sources such as Cape Grim ribeye and flatiron, and lesser-known cuts such as Snake River Farms zabuton. Tender and flavorful, zabuton is also known as Denver steak or chuck short rib, though it has no rib and is nothing like short rib. Fun fact: It means “little pillow” in Japanese. 6410 E. Anybody who thinks rosé is best from June through August hasn’t noticed that summer in Orange County gets underway in July and continues into early fall. Watertable head barman Mauricio “Moe” Ornelas must have noticed: His Côtes de Fleur cocktail at the fine-dining room and bar at the Hyatt Regency Huntington Beach stays on the list into October. It looks as lovely as it tastes; Ingredients include Triennes rosé wine, house-made strawberry brandy, vanilla, and ice made from hibiscus tea in the shape of a rose. 21599 Pacific Coast Highway, Huntington Beach, 714-698-1234
